Sabudana Vada

I mostly use the sabudana only for making vadams and payasams but made them into vadas this time and it came out perfectly well. It tasted quite crispy and crunchy just perfect for the evening snacks.

Sabudana Vada


 You’ll Need:

Javvarisi / Sago (sabudana) - 1 1/2 cups
Potatoes – 3 (medium),
Roasted peanuts – 1 cup
Green chillies - 3,
Fresh coriander leaves – 2 tbsp
Lemon juice - 1 tbsp
Salt - to taste
Oil - to deep fry 




Method:

Soak the sabudana, in enough water to cover it, for about two hours. Drain off excess water. Boil and mash the potatoes well. Coarsely grind the peanuts. Finely chop the green chillies and coriander leaves.

Mix together sabudana, mashed potatoes, ground peanuts, chopped green chillies, coriander leaves, lemon juice and salt. Mix thoroughly. Divide into lemon sized balls first and then flatten like vadas between palms of your hands.

Heat oil in a kadai / pan and deep fry vadas in hot oil till golden brown. Serve hot with chutney of your choice.
