I have been so busy this month and what with the computer out of work I have been unable to blog quite often. Here is a variety rice for a quick fix.
You'll need:
Cooked Rice - 2 cups
For Seasoning / Tadka
Fresh Grated Coconut - 1 cup
Mustard seeds – ½ tsp
Urad dal – ½ tsp
Bengal Gram dal - 2 tsp
Green Chillies, slit – 2
Whole red chillies - 2
Ginger, chopped – ½ tsp
Ground Nuts, roasted - 2 tbsp
Cashew Nut, roasted – 5 - 10
Curry leaves – 1 sprig
Asafetida a pinch
Salt to taste
coconut oil – 5 tsp
Method:
Heat the oil in a pan. First add the mustard seed, once they crackle add urad dal, Bengal gram dal, red chillies, green chillies, ginger, curry leaves one after the other. Fry them well in a slow fire and take care not to burn anything.
Now add the asafetida and put the grated coconut, salt and mix well. Cook till the aroma of the roasting coconut arises.
Now add the cooked rice and mix well. Adjust salt and sauté till the rice gets hot and finally garnish with ground nuts and cashew nuts. Serve hot with chips or Appalams.
You can also use any cooking oil instead of the coconut oil. This rice is a quick and easy fix for lunch box whenever you are running short of time.
