Hot puffed up puris with your favorite side dish is how one should end their long tired day or it is also perfect for brunch on a lazy Sunday. The kids love puris unconditionally no matter what you give them as a side dish. You could never get any objection from them. yesterday's breakfast was puris with puri kilangu. Take the curd in a mixing bowl and add the cooking soda to it. Rub it well. Now add the flour, rava and salt together and mix them well. By adding water little by little knead it into a tight dough. Cover the dough with a damp muslin cloth and let it rest for 5 to 10 minutes.
- All purpose flour / Maida – 1 cup
- Rava / cream of wheat – 1 tbsp
- Curd / yogurt – 2 tbsp
- Cooking soda – 1 pinch
- Salt – to taste
- Water – as required
- Oil – for deep frying
In the meantime heat the oil in a kadai. Take a small lemon sized ball from the dough and with the help of a rolling board and a rolling pin flatten them into palm sized puris. Use rice flour for dusting. Pass them slowly into the hot oil from the sides and deep fry them till golden brown. Serve this hot with tomato thokku or potato masala.
Note: You can also use wheat flour instead of All purpose flour. Avoiding resting the dough for a long time as this will make the puris go limp immediately. Using rice flour for dusting will make the puris to be more crispier.
